    Once every 30 years or so, a great hospitality writing rises to the surface. About 3 years ago, one such writing was Denney Rutherford's "Hotel Management & Operations - 3rd ed". And now there is William Martin's model addressing quality service in the hospitality industry.

    Both independent and chain operations can make practical use of Martin's 32 sets of exercises. If I were in operations, I would casually use some exercises at staff call. I would modify the question or statement as needed to suit my operation. In my current educational environment, I can make just as good use of one example, which is to make the statement: "May I bring you anything else?"

    Where is the beauty of using such a simple question? The key is found with the intonation or emphasis applied to the words "I", "you", "anything", or "else".

    I teach in an ESL-student environment, with as many as 12-15 countries represented by as many as 25 students. The course I have been teaching for 6 years is the upper-level 3-credit course in Hotel & Resort Management. Speech and "talk" becomes particulary sensitive when I use a different intonation or emphasis in my discussion delivery, when entertaining a guest speaker, or engaging in lively discussions with students. I have to make sure the words are understood, and then I have to ensure that the intonation I am using is delivery the desired message.

    When was the last time you "listened" to how your employees interact with guests?

    If you didn't "get it", then all the more reason for you to beg, borrow, or buy this book if you find it!

    even though this book is written for the American farmer, I found a lot of the information quite helpful to me. I have not been farming very long. We work with beef cattle on grass and it has been a steep learning curve for us. Thank you for such well articulated good sense. I have taken initiatives that I thought were sensible and this book has either confirmed my ideas or given me a better way to approach the situation. I have also appreciated the statistical information given about the cattle. Thank you and God bless

    This book was exactly what I was looking for. I know nothing about cattle, my husband has raised them since he was young. I wanted a book that would explain the "little things" to me so I wouldn't have to ask him day in day out what this meant, what they are doing, how will we know when they are in heat, etc. It's very interesting, easy read and very informative.

    I am a novice rancher who bought 37 calves at an auction. At one point I had 15 sick calves on my hands, primitive corrals, and the whole town laughing at me. Tonight, I can honestly say the worst is past. My brother and I doctored ten bad eyes, saved a bloat case, doctored a footrot immediately and effectively, and saved at least five extremely ill pneumonic calves, while vaccinating, branding, and eartaging the whole bunch. Without this book and the thorough, intelligent, and courageous instructions it gives to the cattleman, I would have lost a good part of my herd, all my joy for ranching along with them. As it is, the town isn't laughing anymore and starting to wonder where we came up with all those good ideas they're seeing popping up on our place.

    Well written and easy to understand guide for everything you want to know about cattle. I learned much and constantly refer to this book. It helped me to better understand our cows and their needs. I HIGHLY recommend it to other cattle farmers, even those who think they know all about cattle.

    When we started raising beef cattle a couple of years ago, we had a difficult time finding information on the subject. This book has been an invaluable reference, covering a variety of subjects from breeding and feed to healthcare and handling. The book is well-written and well-organized, and it's clear that the author has years of real experience to draw upon.

    While a bit redundant @ times, I found this to be an excellent treatment of cattle-raising. I am a novice to "cattle ranching" and have found it very useful and easily read; also, well indexed. A few "oldtimers" have found it very useful and have asked where they can get one. The practicality is enhanced by good illustrations.

    I feel this book left me with more unanswered questioned than answers. What should I expect from the calf? How do I get it from place of purchase to the field? What do I do with the left-over animal parts from butchering? Where do I get the calf? Would it be better to buy a heifer? What are the advantages?

    I'm sorry Phyllis, but I'm going to have to slam this book hard against the ground. I bought it at the local Co-Op at a time when I desparately needed important details for raising a small herd of beef calves. But the details just weren't there leaving me feel burned for the.. money.. I spent. Assuming a person is raising one little perfect calf - then the book will maybe get them through. But important information about eye problems, footrot, branding (what if your calf runs off?), giving shots (like, how do you get a calf on the ground to medicate it..not all calves will let you just poke a needle in them), and parasites are omitted or dismissed with the advice to "call the vet." I just couldn't figure out what to do next from reading the book - cover to cover, and that's not what you need for a book like this. It's not a practical guide for the events that actually happen when raising calves. For example, Ms. Hobson goes through the details of blending a delicious grain ration from homegrown gardens for your one calf. Isn't it far more practical and realistic to buy inexpensive pre-mixes from a feed store when you need them? Can you really replace in time and effort the economies of scale of Nebraska grown corn with your little garden? Why waste the time? Similarly, she advises growing hay - but she leaves the reader on their own to figure out how to get it in a bale. Again, for one calf? However, The book is excellent on one topic: slaughtering. Half the book is devoted to it. If you want to heave up a carcass in your driveway (instead of hiring a butcher), you can probably find a way to do it with the excellent instructions in the book. Again, practical tips, like what to do with the hide, aren't included for some reason in the otherwise excellent step-by-step butchering directions. In conclusion, Ms. Hobson's book has too few details for practical application on a living calf...meaning that if you buy this book, you'll probably need to buy another one as soon as you get your hands dirty.

    I'm fifteen and am in FFA I recently purchased my first calf. My Dad got this book for me and it has helped out from purchasing a sound heifer to shelter and feeding. The chapter on calfing is also very helpful. A great book for a first calf project.

            4 out of 5 stars Nothing to differentitate it from the other finite textbooks.......2006-02-25

            I am always trolling for a new and better textbook for my finite mathematics class. In my search, I have found a repetitive sameness to the books that are available. The only constant and real differentiating factors to the books are the order of the material and the quality of the writing. Occasionally, a book will cover a topic that the others don't, but often when that is done; it is a liability rather than an asset.
            This book is like all the others in topics of coverage, the number of exercises is not excessive and there is a larger project at the end of each chapter. As is typical of nearly every math book, solutions to the odd exercises are included. Some day, a rebel will include solutions to the even numbered problems just to be different. I currently use "Finite Mathematics: An Applied Approach 9th Edition" by Sullivan and Mizrahi in my class. Since I am happy with this text and there are no fundamental differences between Sullivan and Mizrahi and this one, I will not be changing what I use. However, I have no doubt that if I were to change to this one, it would introduce no significant problems.

                This book is easy reading.

                Suffern does a good job describing the military experience from boot camp, through Officer Candidate School, through first Vietnam experiences. He had me laughing and saying, "yep, I remember that." Because he was an officer, he's able to give the reader a glimpse into Vietnam from a "manager's" view point. He was too kind in describing his fustration with "leadership."

                Gary Suffern was my platoon leader for about 7 months during my first tour in Vietnam. He speaks the truth about events of Bravo Company of the 19th Combat Engineer Battalion. Yet, he tells only part of the story.

                This is a good read for any student of Vietnam.

                  In The King's Midwife, scholar Nina Rattner Gelbart takes on a daunting task: the biography of a woman so fiercely private (or should that be public?) that she left no record at all of her personal life. "In her hundreds of letters there is never a single mention of her origins, parents, childhood, siblings, education, young adulthood, training, marriage if there was one, children if she had any, friends outside of her work," Gelbart writes, with more than a touch of frustration. What we do know about Madame du Coudray is this: in 1750, spooked by reports that the French population was in decline, King Louis XV appointed her to travel throughout the country, training young peasant women to assist at live births. For 30 years, du Coudray crisscrossed the provinces in pursuit of this goal, using a life-size obstetrical mannequin that she'd invented as a teaching aid. Gelbart relies on du Coudray's voluminous correspondence with regional authorities to construct her portrait of a driven, proud, politically savvy, and fiercely ambitious woman. To make her way as an 18th-century woman in the world of the male medical establishment--not to mention the royal court, and later, postrevolutionary France--du Coudray seems to have downplayed her interior life as much as possible. Yet Gelbart makes "a virtue of necessity" by using the very incompleteness of du Coudray's story to illuminate the larger issues at stake--the "history and mystery" encountered when writing any biography: "Historians always have to work with fragments and lacunae, with revelations and secrets. We may crave coherence and synthesis, but because much remains indecipherable we do not get it." Despite the ultimate "unknowability" of du Coudray and her motives, Gelbart does an admirable job in bringing her to life through her public works. The King's Midwife is a "scholarly" biography--a statement that might justifiably strike fear in the heart of the stoutest reader--but Gelbart keeps the academese to blessed minimum. For the most part, this is a lively and well-written account of an exceptional life.

In 1759, in an effort to end infant mortality, Louis XV commissioned Madame Angélique Marguerite Le Boursier du Coudray to travel throughout France teaching the art of childbirth to illiterate peasant women. For the next thirty years, this royal emissary taught in nearly forty cities and reached an estimated ten thousand students. She wrote a textbook and invented a life-sized obstetrical mannequin for her demonstrations. She contributed significantly to France's demographic upswing after 1760.
                  Who was the woman, both the private self and the pseudonymous public celebrity? Nina Rattner Gelbart reconstructs Madame du Coudray's astonishing mission through extensive research in the hundreds of letters by, to, and about her in provincial archives throughout France. Tracing her subject's footsteps around the country, Gelbart chronicles du Coudray's battles with finance ministers, village matrons, local administrators, and recalcitrant physicians, her rises in power and falls from grace, and her death at the height of the Reign of Terror. At a deeper level, Gelbart recaptures du Coudray's interior journey as well, by questioning and dismantling the neat paper trail that the great midwife so carefully left behind.
