French Cheese.......2007-01-11
Excellent! DK Publishing does a thorough job with superb photographs and complete information. I am both a photo researcher and professional freelance stock photographer and work in publishing!
AVOID THIS BOOK!.......2007-01-10
I suggest that if you live in the typical USA city or town you do not read 'French Cheese'. It will turn you into a cheese snob and ruin any appreciation you currently have for cheese sold in most USA environments. Since reading this very informational 'French Cheese' book, I have yet to find a good 'live' cheese within an one hour drive plus an hour ferry ride of my home. This commute has driven my cheese costs through the roof. My wine costs are now at new heights too, as the suggestions for compatible wines are so interesting. Now my typical day is to get up very early, catch the morning bus (or drive) to the ferry terminal; take the ferry to the city; then walk a distance to a farmer's market area where I can find cheese and wine within a respectable distance from each other. I find a cheese that is still 'alive', look it up in the book, see what wine the 'French Cheese' book recommends, then go to one of the wine shops in the area and try to find that wine. If I cannot find the wine, back to the cheese shop to see what else they have that matches up with one of the cheese / wine recommendations in the 'French Cheese' book. By the time I get all this done it is time for lunch. I go to the one of the local bakeries nearby and get some 'appropriate bread' to go with some of the cheese and wine I purchased, sit down somewhere and have lunch. Then it is time to head for home. It will take me another couple of hours to get home, so it is just in time to start a dinner of some kind, (which is usually based upon one of 'French Cheese' book's cooking with cheese recommendations). I am also afraid that my travel expenses to Europe (France in particular) are going to increase dramatically since most of the cheeses in the 'French Cheese' book are not exported, (and there are so many cheeses to try). I would write more, but I am running late for the ferry. I wish I had never read this damn book.

Book Description
A mouth-watering guide to more than 350 cheeses from every region of France, this definitive reference captures a vast array of savory fromages. Designed for both amateur enthusiasts and serious gourmets, this easy-to-use book enables readers to appreciate the flavors and the process of cheesemaking. Organized alphabetically, each cheese, its seasonal availability, regional origin, and properties are described concisely and clearly. Accompanying the entries are invaluable photographs of the cheese in its various states, both outward bulk and sliced through, for easy identification. In addition, every listing offers wine recommendations by international connoisseurs Robert and Isabelle Vifian, and includes tips for storing, serving, and sampling. To meet the needs of vacationing Epicureans who wish to truly taste the flavors of France, a detailed region-by-region listing of cheese producers, shops, and markets is featured. Additional chapters focus on the origins and history of French cheese, and follow the cheesemaking cycle throughout the year. A special glossary of French terminology related to cheese and its production is included. From recognizing more than a dozen blue cheeses to enjoying fromage frais, this book is an ideal quick reference to selecting and identifying French cheeses at home, in your local cheese shop, or, better yet, while traveling in France.
Customer Reviews:
For reference more than "reading".......2004-06-05
Living in France, I am always making the acquaintance of cheeses I had never before known existed. I always scurry to find this book, and look up the tasty morcel I've just consumed. It's great for learning the basics about various cheeses -- and, as noted by other reviewers -- the photos are divine, but it's not the sort of book one takes into the bath to pore over for hours at a time. Put it on your shelf next to your dictionary and thesaurus; it's that useful!
A great reference.......2004-03-05
As mentioned in previous reviews, this book does a great job of referencing hundreds of cheeses from France, providing photographs, descriptions, and wine recommendations. In these areas, it does a fantastic job. I've learned a lot reading it and I can't wait to take it with me on my next trip to France.
I wish the book gave more guidance on the tastes of the different cheeses and how you might select them. For example, if I like Brie and wanted to try a different nice mellow soft cheese, what might be recommended? This book isn't organized to help answer questions like that.
Overall, an important book for anybody serious about cheese.
WOW.......2003-03-04
I collect field guides and what attracts me to some is the clever layout and design. This volume is in a class by itself and unlike some guides, the text was so informative that i could not put it dowm.
Should receive 6 stars out of 5.
Cheese whiz..........2001-07-28
When I was a child and the milk soured, my ever-frugal mother would set it aside in a bowl and allow it to continue it's transformation into something wild and strange. When the curds and the whey separated, she would pour the contents into a cheese cloth stretched across a strainer and then gather and lift the cloth and squeeze the exess fluid from the curds. We ate the cheese as is...a form of "cottage" cheese I suppose. I was reminded of this when I read FRENCH CHEESES from Eyewitness Handbooks which contains a short history of cheese-making in the front section of the book.
I like this book, and since I am not a cheese expert, I cannot say whether it will make one an expert or not, but it has enlightened me a bit as I continue to experiment with the various kinds of cheeses available in the gourmet section of the grocery stores and the delicatesson in our neighborhood.
I have eaten various cheeses in Paris and other parts of Europe, and thought them better than anything I can buy in the States though I have eaten "fancy" cheeses in some upscale restaurants. I realize the French and others use unpasturized or raw milk in many of their cheeses and the U.S. frowns on the use of untreated milk so perhaps this is a factor. CHEESES identifies cooked versus raw versions.
However, many of the cheeses in this book are not found in U.S. stores because a limited supply exists and/or the product is consumed or sold locally. Generally these are artisanal cheeses (made by hand). CHEESES includes a map showing the farm areas of France and each cheese entry pinpoints the geographic location of the product. You can match the map with the cheese of interest to you and perhaps search for it on your next excursion to the French countryside. In the meantime, the list of producers in the appendix may prove helpful.
Wonderful photographs!.......2000-08-16
I am a big fan of this book since the publication of the original Japanese version titled 'Encyclopedia des Fromages (this includes cheeses from other 15 countries)'. 'French Cheeses' did not only closely follow the original text but also have added wine recommendations, which are very useful.Photographs are beatufifully printed in this version, too. The only problem I have is the large names of 'foreword writer' and 'consultant' on the cover (and the authors' names do not appear on the front). As far as I have compared the two versions, I have not encountered any differences in the text between them. So, what the consultant contributed? Are these 'big names' added because the publisher thought Japanese-written French cheese book would not look attractive? I want to hear from the publisher on this. Anyway, this is a great book for cheese lovers.

A cheese expert speaks.......2000-05-07
Pierre Androet is a cheesemaker who is passionate about cheese. This book is dedicated to his daughter " I would hate to see her in a quandary before the cheese counter". Armed with this authoritative and opinionated book you will inherit, as she will, a minute knowledge of cheese which will enrich your life and those fortunate enough to dine with you. Even if you never ate cheese (which would be almost unthinkable with this author's persuasion) you would be delighted by the style and vigor of this author's writing. He robustly answers every question on cheese one could conceive of including what seasons to serve what selections of cheeses, how to buy cheese, what order to eat cheese in. The only slight omission would be some photographs. A book for the connoisseur of books and cheeses

Book Description
Historically, science has sought to reduce complex problems to their simplest components, but more recently it has recognized the merit of studying complex phenomena in situ. Fractal geometry is one such appealing approach, and this book discusses its application to complex problems in molecular biophysics. The book provides a detailed, unified treatment of fractal aspects of protein and structure dynamics, fractal reaction kinetics in biochemical systems, sequence correlations in DNA and proteins, and descriptors of chaos in enzymatic systems. In an area that has been slow to acknowledge the use of fractals, this is an important addition to the literature, offering a glimpse of the wealth of possible applications to complex problems.

Book Description
During the last decade the well-established tools of statistical physics have been successfully applied to an increasing number of biological phenomena. It is a fruitful approach to systems characterised by fluctuations and/or a large number of very similar units, and such systems are common in biology, whether it be the individuals in the codons of a genetic code or the behavioural responses of macromolecules to thermal fluctuations. This book is thus able to cover a wide range of phenomena, including fractal pattern formation, group motion in organisms from bacteria to humans, or the mechanisms by which fluctuations are rectified in the cell's molecular machinery. This book provides a summary of the majority of recent approaches and concepts born in the study of biological phenomena involving collective behaviour and random perturbation, as well as presenting some of the most important new results to specialist researchers. It is, particularly, a key text for all students of scaling and fluctuations in biology.

WHERE THE DREAM BEGAN
Football fans everywhere know of Dan's amazing NFL career and his dozens of league records, but little is publicly known about the early path he took on his road to superstardom. Where the Dream Began chronicles Dan's formative years growing up in Pittsburgh, starring in both football and baseball for Central Catholic High School, and his All-American career at the University of Pittsburgh. The rare video footage is accentuated by present-day interviews with Dan and several of his coaches and teammates as they all reflect on the beginning stages of what ultimately became one of the greatest careers in NFL history.

Great book for Marino fans.......2006-06-20
Having been a huge fan of Dan Marino's and the Miami Dolphins since 1983 I can highly recommend this book.
"My Life in Football" details Marino's early days playing football at Central Catholic High School in Pittsburgh, PA to being drafted by the Dolphins in 1983 and follows through to Dan's broadcasting career and charity work. The personal and professional photographs alone are worth the price of this book but add an introduction by one of the greatest NFL coaches in history, Don Shula, and you'll be hard pressed to find a better inside view of professional football.
Dan Marino: My life in Football.......2005-09-23
My husband could not have been more pleased.

Overall I thought the book was okay (the dvd was great), I would of like to learn more about Dan's thoughts on the nfl and some more personal stories of the locker room and training camp experiences he had. The book has a lot of great photos.

Book Description
'My thoughts were in turmoil as we drove back to Rockwell. Was our season over before it really started?' Had the obstacles placed in their path finally derailed Rollins girls? varsity soccer team?s chances of winning the state championship? Had Maggie and her senior friends succeeded in persuading the school administrators to keep the program mediocre? At the time, the answers to these questions seemed the most important, indeed, the only concern in Bobbi?s life. High school freshman Bobbi Martin had already conquered her fears about acceptance at her new school. She had cleared her boyfriend Alan of starting the fight in the cafe. She had no idea the exposed culprit would seek revenge by intentionally causing an automobile accident. A broken leg would cut Alan?s football season short. And before her freshman year ended, Bobbi?s best friend?s involvement with alcohol and drugs would almost take her life.
